Here's a step-by-step guide to making paneer at home:
1. Pour the milk into a large saucepan and heat it over medium heat. Stir occasionally to prevent the milk from sticking to the bottom of the pan.
2. Once the milk starts to boil, reduce the heat to low. Add the lemon juice or vinegar gradually while stirring the milk gently. The acid in the lemon juice/vinegar will cause the milk to curdle.
3. Keep stirring gently until the milk has completely curdled, and you can see the greenish whey separating from the solids (curds). This usually takes a few minutes. If the milk doesn't curdle completely, add a little more lemon juice or vinegar and continue stirring.
4. Once the milk has curdled completely, remove the saucepan from the heat. Let it sit undisturbed for a couple of minutes to allow the curds to settle.
5. Place a colander in the sink and line it with a double layer of cheesecloth or muslin cloth. Carefully pour the curdled milk into the colander, allowing the whey to drain away. The curds will be collected in the cheesecloth.
6. Rinse the curds under cold water to remove any lemon juice or vinegar taste and to cool them down.
7. Gather the edges of the cheesecloth and tie them together to form a bundle. Hang the bundle over the sink or a large bowl to allow excess whey to drain. You can leave it to hang for 30 minutes to an hour.
8. After the excess whey has drained, place the bundle on a flat surface and put a heavy object, like a book or a plate with a weight, on top of it. Leave it like this for 1-2 hours. This will help press the curds together and remove any remaining whey.
9. Once the paneer is well-set, remove it from the cheesecloth and cut it into desired shapes or crumble it.
